Advice with sharpening

Avoid any sharpening tools unless it is a whetstone, automatic and manual sharpeners will chip this knife to disrepair

NavalOoh, good to know. I’m always using that cylindrical rasp that comes with knife sets. 🤦🏽

AaronOh I'm glad you mentioned that! Thats a honing steel, its a common belief that it sharpens, even one of my instructors made the mistake, its actually for straightening your blade (blades go out of line every now and then) You should totally use that every now and then. Take a towel lay it on your board with the pointy bit down, using a firm grasp at a 20 degree angle run your knife down on the edge of the honing steel, both sides 3 times each and it will straighten it. Then when the blade is actually just dull or chipped, use a whetstone, start at 800 grit and work your way up to around 2000 grit 🤗

AaronTo clarify the things I don't recommend using with Japanese knives are those little box things with bits of steel inside them that you run knives through, they will chip up any Carbon Steel Japanese knife
