Once upon a time there was a young chef.
In fact, the chef was world-renowned, and traveled to far-flung locales to serve up her signature dish: a stack of pancakes. Food critics lauded the chef for turning the once simple, universally loved breakfast staple into culinary bliss. “It’s Nirvana for the palette,” one commentator said. But as the chef continued to sling the same recipe, year after year, she began to wonder if maybe there was a different, better way to make her famous meal.
Did other chefs use a non-stick griddle?
Could pancakes be equally fluffy without whipped egg whites?
When she called upon her inner circle of cooks to get some answers, she was inundated with recommendations.
One chef mixed coconut oil and sea salt in his batter. Another used carbonated water for peak fluffiness. And one cook even used orange juice in her recipe! Influenced by her friends’ ingredients, she took to the kitchen to experiment with her own recipe.
